The Power of Culinary Medicine

“An Ordinary Meal” | Michael Fenster | TEDxGreensboro

In this captivating talk, Chef Dr. Mike reveals how our everyday food choices have the power to either heal or harm. Learn how Culinary Medicine can help transform your relationship with food and improve health outcomes, one meal at a time.

Why Culinary Medicine?

Uncovering the Flaws in Traditional Dietary Guidelines

For decades, dietary guidelines have failed to prevent the rise of chronic diseases in the U.S. Despite following recommendations from government agencies and experts, preventable diseases such as type II diabetes and heart disease are at epidemic levels. BridgMed addresses these failures with a holistic, evidence-based approach. Chef Dr. Mike’s Culinary Medicine offers a solution that goes beyond outdated guidelines to transform how we approach food and health.

Preventable Chronic Diseases Tied to Diet

The epidemic of preventable chronic disease is staggering.

  • 80,000 cancer cases per year (Zhang, 2019),
  • 80% of early heart attacks and strokes (WHO, 2015), and
  • 90% of type II diabetes cases are tied to poor lifestyle choices

These shocking statistics stem from poor dietary habits, especially the consumption of ultra-processed foods (UPFs). Studies show that UPFs increase the risk of type II diabetes by up to 74% and raise the risk of early death by 40%. (Delpino, 2022; Torres-Collado, 2024)

The Human Connection to Food
In academic terms, Culinary Medicine is defined as:

The multidisciplinary application of evidence-based decision-making in the selection of ingredients and techniques used in preparing foodstuffs, with the goal of achieving and maintaining health and wellness through an optimized food experience.

But in simpler, practical terms, it’s all about your relationship with the food you eat.

And the history of that relationship is, in many ways, the history of humankind.

Hundreds of thousands of years ago, our ancestors wandered the vast Serengeti plains, surrounded by danger. Sabertooth tigers prowled the darkness, and survival was far from guaranteed. One small tribe of primates, no different from the others, huddled together around a fire. With no claws, no fangs, and little speed, they had only their wits and each other for protection.

Then, something remarkable happened. As the fire flickered and kept the wolves at bay, one member of the group tossed a rack of mastodon ribs onto the flames. In that moment, everything changed. The simple act of sharing a meal gave rise to something more. As they gathered around the fire, they didn’t just eat – they told stories, sang songs, and shared in each other’s company. That night, under the stars of the African sky, a group of primates became something greater. They became human.

From that moment on, our relationship with food has shaped the trajectory of human history. It has governed our health and wellness, defined our relationships with one another, and even influenced the rise and fall of entire civilizations. Our bond with food is not just a part of our culture—it is one of the foundation stones of our humanity.

Yet, in the last century, we’ve grown increasingly disconnected from this ancient relationship. Modern industrial practices, convenience foods, and ultra-processed ingredients have distanced us from the very essence of what nourishes us. But now, we stand at the dawn of a new evolution—one rooted not in myth or superstition, but in the fusion of science and tradition. Armed with our knowledge of genetics, the microbiome, micronutrients, and epigenetics, we have the tools to rebuild and reimagine our connection with food.

This is the promise of Culinary Medicine: to weave these ancient threads of knowledge into the modern fabric of health and healing, restoring the powerful relationship between food and wellness that has always been central to the human story.
